Grilled Cape Salmon with Lemon Herb Butter
Ingredients:
- 2 Cape Salmon (Geelbek) fillets
- 2 tbsp olive oil
- Salt and pepper, to taste
- 2 tbsp butter, melted
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
- 1 clove garlic, minced
Instructions:
- Prep the Fish:
Pat the Cape Salmon fillets dry with paper towels. Brush both sides with olive oil, and season with salt and pepper. - Make the Lemon Herb Butter:
In a small bowl, mix together the melted butter, lemon juice, chopped parsley, and minced garlic. - Grill the Fish:
Preheat your grill to medium-high heat. Place the fillets on the grill, skin-side down, and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork. - Serve:
Transfer the grilled Cape Salmon AKA Geelbek to a serving plate and drizzle with the lemon herb butter. Serve with your choice of sides, such as roasted vegetables or a fresh salad.
