This is the most traditional way to braai snoek in the Western Cape.
Ingredients
- 1 whole snoek (butterflied)
- 3 tbsp apricot jam
- 2 tbsp butter
- 1 tbsp lemon juice
- 2 cloves garlic, crushed
- Salt and black pepper
Method
- Braai the snoek skin side down first over medium coals.
- Melt the butter, apricot jam, lemon juice and garlic together.
- After about 8 minutes, turn the fish and brush generously with the glaze.
- Braai another 5–7 minutes until the flesh flakes easily.
- Serve with lemon wedges and fresh bread.
