Zesty Baked Kingklip with Garlic Flakes and a Citrus Drizzle

Ingredients:
For the Kingklip:
Get your fresh off the boat Kingklip from Hooked On Africa Fresh Fish Market in Hout Bay. Call in ahead to make sure it’s not sold out. Ask for skin off- de-boned. Tell them how many adults it’s for so they can choose the right size Kingklip.
- Kingklip fillets
- 1 tbsp garlic flakes
- 1 tbsp onion flakes
- 1 lemon (zest and juice)
- 2 tbsp butter (melted)
- Fresh parsley and coriander (chopped, for garnish)
For the Side:
- 1 cup black rice
- 1 bunch asparagus
- Salt and pepper, to taste
For the Citrus Dressing:
- 2 tbsp orange juice (freshly squeezed)
- Zest of 1 lemon and 1 orange
- 3-5 tbsp olive oil
- 1-1 tbsp balsamic vinegar
The more you want, the more you make!
Instructions:
- Preheat Oven: Preheat your oven to 180°C (350°F).
- Prepare Kingklip: Place the Kingklip fillets on a baking tray lined with a bottom drizzle of olive oil and butter mixed for flavour. Drizzle extra virgin olive oil over the fillets and sprinkle garlic flakes, onion flakes, and lemon zest. Squeeze fresh lemon juice over the fillets, and season with cracked black pepper, madena salt flakes.
- Bake: Bake in the oven for 15-20 minutes, until the fish is looking flaky and cooked through.
- Cook Black Rice: While the fish is baking, cook the black rice according to package instructions. Set aside. (normally needs loger than white rice)
- Prepare Citrus Dressing: In a small bowl, whisk together orange juice, lemon and orange zest, olive oil, and balsamic vinegar. Season with salt and pepper to taste.
- Sauté Asparagus: Heat a pan with a shallow level of water and olive oil. Add the asparagus and sauté for 7-10 minutes, tossing frequently, until they are bright green, tender, and slightly browned. In the last 2 minutes, add salt and a splash of soy sauce, continuing to toss so the flavors are evenly distributed.
- Assemble: Plate the Kingklip with a serving of black rice and asparagus. Drizzle the citrus dressing over the fish and vegetables. Garnish with fresh parsley and coriander.
Pour yourself a nice glass of South African white wine or an ice cold beer, it goes well with this dish.
