A new year, a new recipe for one of the Cape’s favorite fish dishes!

Yellowtail is a popular fish in South Africa, and a simple and flavorful marinade can enhance its natural taste. Here’s a tried-and-proven South African-style marinade for yellowtail fish. A fish on its own without a marinade… tastes like a fish without a marinade, so here’s your marinade recipe! 

Cape Town Citrus Burst Marinade for Yellowtail:

Ingredients:

  • 2 fresh yellowtail fillets (purchased from your local – Hooked On Africa Fresh Fish Market)
  • 1/4 cup olive oil
  • 3 tablespoons soy sauce
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons freshly squeezed orange juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 cup of laughter and good vibes (essential South African ingredients)

Instructions:

  1. Prepare the Marinade:

    • In a bowl, whisk together the olive oil, soy sauce, lemon juice, orange juice, minced garlic, ground coriander, ground cumin, paprika, salt, and black pepper. Ensure that the marinade is well combined.
  2. Marinate the Yellowtail:

    • Place the yellowtail fillets in a shallow dish or a resealable plastic bag.
    • Pour the marinade over the fish, ensuring that both sides are well-coated. If using a bag, remove excess air and seal it.
    • Marinate the yellowtail in the refrigerator for at least 30 minutes to allow the flavors to infuse. For a more intense flavor, you can marinate it for up to 2 hours.
  3. Preheat the Grill:

    • Preheat your grill or braai to medium-high heat.
  4. Grill the Yellowtail:

    • Remove the yellowtail from the marinade, allowing any excess to drip off.
    • Place the fillets on the preheated grill, skin side down.
    • Grill for approximately 4-5 minutes per side or until the fish is cooked through and easily flakes with a fork.
  5. Serve:

    • Carefully transfer the grilled yellowtail to a serving platter.
    • Garnish with freshly chopped parsley for a burst of freshness.
